Carolyn’s ‘chicken soup for the soul’

Boy did I manage to surprise myself last night with the dinner I made.  It was just delicious and completely filling.  I have to share it with you given all the ingredients are on the good doctors list…

Add heaped tablespoon of Massel vegetable stock powder (no additives and all natural) to about 1ltr of filtered water in a saucepan and bring to the boil.  Then add 95gms of *chicken breast (I had some frozen and just pulled it out of the bag and plonked it in) along with a couple of handfuls of vegetables like spinach, cauliflower, mushrooms, capsicum, carrots and cherry tomatoes.  Let it simmer away until the chicken is cooked but not so the vegetables turn grey and limp.

I then added some chili powder (I like things hot) along with the juice of ½ lime, which gave it a wonderful tang.

Serve up with some coriander, or not, and you’re good to go.  Just delicious and I made enough to take to work with me today.

*You can substitute chicken with any meat – prawns would be delicious too.
