Late last year, my wonderful mother gave me her food steamer. Mum just loves to buy all the kitchen gadgets she can get her hands on, but rarely uses them. It has been living in my garage for a good three months. That was until last night.
I love fresh barramundi (I have never been a fan of fish until recently) and remembered I had some in the freezer. Then it dawned on me. Why not use the steamer.
Much to my delight, after cleaning off the layer of accumulated dust, it looked brand spanking new.
So what was I to do with the fish?
I read Gwyneth Paltrow’s lifestyle site GOOP. In her December 08 newsletter, she discussed the benefits of detoxing after the holidays. Whilst I believe in detoxing, I find I’ve a hard enough time sticking to the 20 points a day allocated by Weight Watchers. That was out of the question for me, though I haven’t ruled detoxing out in the future.
I modified the Steamed Salmon and Greens, swapping out the salmon for barramundi, and the kale, chard and dandelion with simple bok choy and spinach leaves. I also added ¾ cup of rice to make it a little more substantial. It was just delicious.
Tonight I am going to try some root vegetables and see how they turn out. I highly recommend a steamer for low point meals with a lot of nutrients.
**UPDATE** they turned our really, really well. Now, what to cook next?
